#ChristmasWeek Day 4...Featuring Eggnog Cookie Truffles and a Swissmar Roaster Giveaway

Today, I'm wrapping up my trio of easy-to-make holiday sweets that taste great, save time, and reduce stress. I'm sharing Eggnog Cookie Truffles, a yummy adults-only no-bake treat that's a riff on Emeril Lagasse's classic rum balls. I flavored my truffles with bourbon, nutmeg, cinnamon and prepared eggnog. After being coated in spice-infused powdered sugar, they have all your favorite eggnog flavors. Keeping with the southern feel, I subbed pecan pieces for the walnuts normally found in rum balls. Mercy, these truffles sure are good!

Eggnog Cookie Truffles

Ingredients:
  • 1 11-ounce box vanilla wafers, crushed into crumbs
  • 1 cup powdered sugar
  • 3/4 cup pecan chips
  • 1 tbs. cinnamon
  • 1 tsp. freshly grated nutmeg (1.5 tsp. if using jarred)
  • 2 tbs. honey
  • 1/3 cup eggnog
  • 3 tbs. bourbon  
For rolling the truffles:
  • 1 cup powdered sugar
  • 1 tbs. cinnamon
  • 1 tsp. freshly grated nutmeg (1.5 tsp. if using jarred)
Directions:
Step 1: Add the truffle ingredients to a large mixing bowl. Using a sturdy spoon, combine all the ingredients until a thick dough forms. I found that using pristinely clean hands was the best way to incorporate the last bit of sugar into the dough. Refrigerate the truffles for 30 minutes.
Step 2: While the truffle mixture chills, prepare the powdered sugar-spice mixture for rolling. Remove the chilled truffle mixture from the fridge and roll into small balls and roll in the spiced powdered sugar -- two coats should do it. You should get approximately 3 dozen truffles per batch. Store the truffles in a plastic container in layers, with parchment between each layer.
That's it...how amazingly simple! These potent little candies are moist and delicious, with a little kick from the bourbon...and a nice amount of spice thanks to cinnamon and nutmeg inside and out.
