Every bite contains two of my most my favourite things: warm and melt-y chocolate chips, and bursts of juicy blueberries.


And the best part? Well, that would have to be the low fat part. The parts where I can eat something so decadent without hurting my diet…or health!

This entire stack happens to be 224 calories. Yeap! I know!


And 8g Protein | 4g Fat | 39g Carbs | 2g Fibre!


Weight Watchers 6pp!! Beauuutifulllll!!! Don’t you think?


I love preparing my pancakes with half white and half wholemeal/wholewheat flours…simply because I find combining both give a magical fluffy and FILLING result — without compromising the true pancakes taste value. Because let’s be real here..I ALWAYS want my pancakes to TASTE like pancakes! Who’s with me?! BUT! Having said that, you can use any flour your heart desires!


It just so happens I’m on a Spelt kick!

  • 2 tablespoons wholemeal spelt flour (plain/all purpose)

  • 1/2 teaspoon baking powder - (1 teaspoon for all purpose!)
  • 1 teaspoon vanilla extract
  • 2 tablespoons liquid egg whites (or 1 egg white)
  • 2 teaspoons low fat vanilla greek yoghurt

  • 1 handful fresh blueberries

Instructions

  • Mix all ingredients together in a bowl until combined. The pancake batter should be smooth and free from lumps.
  • Pour 2 tablespoons of batter per pancake onto a greased nonstick pan/skillet. Cook on low - medium heat until bubbles start to form on top and flip.
  • When golden and cooked, remove from pan and serve with maple syrup or honey!
  • Easy!
