I'll admit that I'm in complete denial that Christmas is less than a week away. My holiday to-do list is still a mile long, so it's going to be a mad dash to get everything finished by Thursday. However, one thing that I don't have to stress about is finding a collection of quick and easy last-minute holiday recipes to choose from! At this point, I'm looking for easy recipes that taste great and don't take hours to make. This week's Last Minute Holiday Recipes #SundaySupper event is being co-hosted by Wendy Hammond of Wholistic Woman and T.R. Crumbley of Gluten Free Crumbley. They asked us to share recipes that feature maximum impact and minimal time. My Lobster Salad Puff Pastry Bites definitely fit the bill!

Ingredients (makes 2 dozen bites):
- 1 package (24) frozen puff pastry cups
- 1/2 cup good-quality mayonnaise
- 1 tbs. balsamic vinegar
- 1 tbs. mustard
- 1 tsp. Old Bay seasoning
- 1 tsp. sea salt
- 1 tsp. granulated garlic
- 1 tbs. parsley
- 1 lb. lobster tail meat, chopped (approximately 1 cup) [NOTE: substitute chopped shrimp if that's what you have on hand!]
- For garnish: sea salt flakes and additional Old Bay seasoning
Step 1: Up to a day ahead, make the lobster salad. Add the mayonnaise, balsamic, Old Bay, sea salt, garlic, and parsley to a mixing bowl. Whisk until the ingredients are completely combined into a dressing. Add the chopped lobster (or shrimp) and toss with the dressing. Refrigerate until ready to spoon into the puff pastry cups.
Step 2: Heat oven to 400. Place the frozen puff pastry bites on a non-stick rimmed baking sheet. Bake until puffed and golden -- about 20 minutes. Use a wooden dowel to push the center pieces down, forming a cup. Let the puff pastry cups cool for at least 30 minutes before filling.

Step 3: When ready to serve your guests, use a small spoon to fill the puff pastry cups with some of the lobster salad, mounding it slightly on top. Sprinkle each puff with a bit more Old Bay seasoning and a flake or two of sea salt on top -- lemon-infused sea salt is especially nice! Place the finished bites on a festive holiday platter and serve.
Wowza -- these appetizer bites are fabulous! The flaky puff pastry holds a perfect amount of the lobster salad. The dressing is a little spicy and a little tangy -- but the sweet lobster chunks are definitely the start of the show here. Nobody has to know just how simple these appetizers are to make -- that can be our special secret!! These decadent little bites are a perfect addition to your holiday appetizer table.
They'd also be ideal for a relaxing at-home New Year's Eve celebration, because they'd pair perfectly with a glass of chilled champagne!!
