Confession: I love breakfast foods...but not so much in the morning. But for brunch...or breakfast for dinner? For me, that's perfection! Today, I'm sharing a delicious baked oatmeal recipe that's a comforting meal ANY time of day. My Tropical Coconut-Orange Baked Oatmeal is delicious, dairy free, and features a secret ingredient: Coffee mate natural bliss® Vanilla Almond Milk creamer! This yummy creamer is made with natural ingredients like almond milk, a touch of cane sugar, and Madagascar vanilla extract. Along with a bit of maple syrup, the creamer provides the finished oatmeal a light sweetness and warm vanilla flavor. Assembling this recipe takes about 15-20 minutes, but the baking time is totally hands off...and you'll be rewarded with six servings of delicious oatmeal to enjoy!

Tropical Coconut-Orange Baked Oatmeal

Ingredients (makes 6 servings):
Dry Ingredients:
  • 2 cups oatmeal
  • 1/3 cup light brown sugar, packed
  • 1/3 cup chopped pecans
  • 1/3 cup toasted coconut flakes
  • 3/4 cup mandarin orange pieces
  • 1 tsp. baking powder
  • 1 tsp. sea salt
  • 1 tsp. cinnamon
Wet Ingredients:
  • 1.5 cups unsweetened vanilla almond milk
  • 1/2 cup Coffee mate natural bliss® Vanilla almond milk creamer
  • 1 tbs. melted butter
  • 2 tbs. liquid egg whites (or 1 large egg)
  • 1/4 cup maple syrup
  • 1 tsp. vanilla extract 
Directions:
Step 1: Preheat oven to 375. Spray a 9x9 baking pan with non-stick spray and set aside. Add the oatmeal, brown sugar, pecans, coconut, baking powder, sea salt, and cinnamon to a large bowl. Stir to combine and add the dry ingredients to the prepared baking pan. Top with the mandarin orange pieces.


Step 2: Add the almond milk, Coffee mate natural bliss® creamer, egg white/egg, melted butter, maple syrup, and vanilla to a large measuring cup. Whisk until liquid ingredients are completely combined. Pour the liquid ingredients evenly over the ingredients in the baking pan, making sure the entire contents are covered with liquid.

Step 3: Place the square baking pan of oatmeal on top of a cookie sheet. Bake for 40-45 minutes, until the oatmeal is set in the middle. To ensure even baking, rotate the baking sheet halfway through the baking time. To serve, spoon the baked oatmeal into serving bowls with additional creamer and maple syrup on the side. 
This oatmeal is moist, lightly sweet, and delicious! The citrus burst of the mandarin oranges is perfect with the tropical coconut and earthy pecans -- but cashews or macadamia nuts would work really well too. The addition of Coffee mate natural bliss® vanilla almond milk creamer adds creaminess and a warm vanilla base flavor. Another big plus? This oatmeal tastes even better the next day, and leftovers can be frozen to enjoy later! This chunky oatmeal is great on its own, but I usually add bacon or sausage links to round out the meal.
