#SundaySupper Is Turning TWO...Featuring Spice-Crusted Fish Tacos with Confetti Salsa

Today is a very special day...#SundaySupper is turning TWO years old! We're celebrating this milestone with a virtual party of some of our favorite celebration dishes. Our hostess Liz from That Skinny Chick Can Bake is leading this party, and we've got some amazing recipes to share with you! The #SundaySupper group is one of my most cherished blog affiliations for so many reasons, one of which is the amazing people in this group. Not only are the #SundaySupper bloggers amazing cooks and writers, they're fabulous people too! Everyone is so supportive and friendly...and the recipes they share are always mouth-watering.

The glue that holds our #SundaySupper family together is our founder, Isabel from Family Foodie. Isabel founded this movement two years ago as a way to bring families back around the dinner table. Every Sunday, we come together to share in her vision...and feature recipes based on a fun theme. In the past two years, this movement has grown to include writers all over the U.S. -- and beyond. The recipe I'm sharing today is my personal thank-you to Isabel. She lives in Florida and loves fish tacos as much as I do. Knowing this, I created my Spice-Crusted Fish Tacos with Confetti Salsa just for her! These healthy tacos feature chunks of mahi coated in a spicy rub and pan seared. They're topped with a festive fruit salsa and a drizzle of Mexican crema. They're definitely celebration-worthy!

Spice-Crusted Fish Tacos
with Confetti Salsa

Ingredients:
  • 1.5 lbs. mahi fillets
  • 1 tbs. olive oil
  • 6 flour or corn tortillas
  • Mexican crema for drizzling (you can also thin light sour cream with a bit of milk until it's the right consistency)
For the spice rub:
  • 1 tsp. cumin
  • 1 tsp. corriander
  • 1 tsp. salt
  • 1 tsp. Mexican oregano
  • 1 tsp. dried cilantro
  • 1 tsp. chili powder
  • 1 tsp. dried orange peel
  • 1 tsp. granulated garlic
For the salsa:
  • 1/3 cup pomegranate arils
  • 1/3 cup diced jicama
  • 2 green onions, sliced
  • 2 tbs. finely diced purple onion
  • 1/2 cup diced peach (can sub mandarin orange or mango)
  • Juice of 1/2 a lime
  • 1/2 tsp. chile powder
  • 1 tbs. honey
  • 1 tsp. dried cilantro
Directions:
Step 1: Combine all of the salsa ingredients in a small bowl. Stir to combine, until the honey is incorporated into the lime juice to make a sauce. Set aside in fridge while you prep the rest of the ingredients.
Step 2: Combine all of the spice rub ingredients in a small bowl. Stir well to thoroughly mix. Cut the mahi into bite-sized chunks. Toss with the spice rub until all of the pieces are evenly coated.
Step 3: Heat the olive oil in a large non-stick skillets over medium heat. When the pan is hot, add the mahi in a single layer. Sear on all sides until the fish is cooked through.
Step 4: To assemble the tacos, heat the tortillas. Top with chunks of the seared mahi. Top with some of the salsa, then drizzle with crema. Roll up the tacos and enjoy!
These tacos are a little bite of Summer in the middle of Winter! The fish is juicy, with the perfect amount of heat. The fun fruit-based salsa provides a bit of crunch from the jicama and the pomegranate seeds...and the crema provides a bit of lush creaminess. It's not especially low in fat, but I only use a little bit on each one...and the rest of the dish is light and very healthy! Because they fish is cooked on the stovetop, they can be made indoors year-round.
