Ingredients

SALAD

  • 5 ounces baby arugula
  • 1/4 cup shaved parmesan

LEMON VINAIGRETTE

  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon sugar
  • 1 clove garlic crushed

Instructions

  • In a large salad bowl, toss arugula with shaved parmesan.
  • In a small mixing bowl, whisk together lemon zest, lemon juice, garlic, vinegar, sugar, and olive oil.
  • Pour dressing over arugula and toss to coat.
