Cowboy Salsa...Featuring Red Gold Tomatoes with Lime Juice & Cilantro

My friends at Red Gold Tomatoes recently sent me a couple of cans of their Mexican-inspired Petite Diced Tomatoes with Lime Juice & Cilantro...along with a fabulous recipe for a simple Cowboy Salsa that you can whip up in a flash. I made a batch of the salsa after work last night. I can vouch that it is definitely a snap to make AND tastes fabulous! I made a few minor adjustments to their recipe to suit our tastes, but I stayed pretty true to their original recipe. I don't care for blackeyed peas, so I subbed in a can of pinto beans. I can't eat green bell pepper, so I simply subbed in an equal amount of sliced green onion and jalapeno in its place to keep the pretty green color scheme. I love how this colorful salsa looks like festive confetti in the bowl!

This salsa is a fabulous, simple recipe to have in your back pocket during the upcoming football season. Simply assemble it the morning of the big game and let it chill in the fridge for a few hours. By kickoff, you've got a healthy game-watching snack that will feed a crowd of hungry fans. Add some scoop tortilla chips, and you're ready for a party! Since the usual game-watching foods can be a bit high in calories, this will dip can help even things out a bit -- without sacrificing flavor in the process.

Cowboy Salsa

Step 1: Combine the following ingredients in a large mixing bowl: 1 can rinsed/drained pinto beans, 1 can drained Red Gold Petite Diced Tomatoes with Lime Juice & Cilantro, 1 cup frozen corn kernels (thawed), 1/3 cup small-dice purple onion, 2 sliced green onions, 1/2 seeded finely diced jalapeno, and salt/pepper to taste.


Step 2: Add 3/4 cup of your favorite Italian salad dressing and stir well to thoroughly combine all ingredients. Refrigerate for at least two hours to let the flavors mingle while the salsa chills. Serve with scoop tortilla chips.


That's it! This salsa is a snack that you can feel good about eating: low in fat, high in fiber, and just plain delish! Feel free to add/reduce/leave out the jalapeno, depending on the spice level you like. Half a seeded jalapeno gave it a little kick, but I would add a whole jalapeno next time since we like our food pretty spicy. This versatile salsa will be in my regular cooking rotation for sure. I made healthy Tex-Mex chicken cobb salads last night that featured this salsa spooned on top just before serving, and it was fabulous!
