Creamy Bananas Foster Crepes...Featuring Frieda's French-Style Crepes
I love crepes. What's not to love about paper-thin sweet pancakes filled with sweet or even savory delights? The problem is I very rarely take the time to make crepes...and when I do, I'm always nervous that they won't come out right. Who needs stress when crepes are a magical dish? My friends at Frieda's came to my rescue with their delicious pre-made French-style crepes. They come with 10 perfectly formed crepes sandwiched between non-stick sheets, which means no stress for me. They're a huge time saver as well. I can have a gorgeous dessert ready to serve in about 15 minutes by using these convenient crepes! I was trying to decide what to make with my package of crepes when I spied a pair of very ripe bananas in my kitchen yesterday. Then it hit me: Bananas Foster!! From that inspiration, I came up with my Creamy Bananas Foster Crepes.
The crepes are spread with a thin layer of flavored cream cheese. Then, they're topped with bananas cooked in butter and brown sugar...and some chopped glazed pecans. If you love Bananas Foster, you'll flip for these crepes. Even better, they're ready to eat in about 15 minutes!
Step 2: Place a non-stick skillet over medium-high heat. Add 4 tbs. (1/2 stick) of butter to the pan. When it melts, add 1/2 cup brown sugar and stir to combine. When the mixture comes to a boil, add 1/3 cup maple syrup, 1/2 tsp. salt, and 1 tbs. vanilla. Stir to combine. Lower heat to medium and add 1 sliced banana for each two servings of crepes. Add 2 tsp. cinnamon and stir carefully to combine, making sure you don't break up the banana. Cook for 1-2 minutes.
Step 3: To assemble, spoon approximately 1/3 cup of the syrup and half of the bananas on top of each two-crepe serving. Sprinkle with chopped glazed pecans and powdered sugar. Serve with a bit of whipped cream...or ice cream if you're feeling particularly indulgent!
These crepes are very decadent...definitely for special occasions! They're sweet, with a bit of creaminess from the cream cheese. The pecans add a nice bit of crunch, and the crepes are fresh and flavorful. The addition of maple syrup and salt aren't commonly found in Bananas Foster, but I liked the nice background flavors they added. Add it up, and you've got a company-worthy dessert that you can whip up after the busiest of work days. This is a great recipe to have in your back pocket.
I frequently keep packages of these ready-to-go crepes on hand for quick desserts. We especially love them filled with jam and topped with fresh berries and whipped cream! Frieda's French-Style Crepes can be found in the Produce section of most large grocery chains, including most HEBs in Texas.

Step 1: For each serving, thinly spread two Frieda's French-style crepes with 2 tbs. of your favorite flavored cream cheese. [Note: I used White Chocolate Philadelphia Snack Delights.] Fold each crepe top down and then left over right, forming a triangle. Place the crepes slightly overlapping on a plate. Set aside while you make the topping.
