February Secret Recipe Club...Featuring Slow Cooker Peking Chicken

After a brief hiatus for the holidays, I'm back for another fun Slow Coker Peking Chicken used ingredients that I already had on hand in my kitchen. It literally took me 10 minutes to prep everything, then my slow cooker did the rest. If you're looking for a super easy recipe that delivers great Asian flavors? You'll definitely want to give this recipe a try ASAP!! The only tweaks I made to the recipe were to cook four chicken thighs instead of eight...but I kept the amount of sauce ingredients the same to ensure we had lots of flavorful sauce. I also added a bit of red pepper for spice and some lime juice for a slight tang. Finally, I seared the skinless chicken thighs before pouring the zesty sauce over the top. This flavorful chicken can be served over steamed rice, noodles...or even over orzo like I did!

Slow Cooker Peking Chicken

Ingredients:
  • 4 bone-in chicken thighs, skin removed
  • 3/4 cup sliced green onions
  • 4 garlic cloves, finely minced 
  • 1/4 cup soy sauce
  • 3 tbs. honey
  • 1 tbs. grated ginger
  • 1/4 tsp. sesame oil
  • 1/2 tsp. red pepper flakes
  • Juice of half a lime
Directions:
Step 1: Add the green onions, garlic, soy sauce, honey, ginger, sesame oil, red pepper flakes, and lime juice to a measuring cup. Whisk well to completely combine and set aside.
Step 2: Sear the chicken thighs on both sides in a non-stick pan sprayed with cooking spray until browned. Add the thighs to a slow cooker. Pour the reserved sauce over the top and cover. Cook on Low temperature for 3-4 hours, flipping the thighs over midway through the cooking time. This ensures they're evenly flavored in the cooking liquid.
Step 3: Cook your choice of starchy side: rice, noodles, or orzo pasta according to package directions. To serve, spoon some of your side dish in the bottom of a shallow bowl. Top with one chicken thigh, and spoon some of the flavorful sauce on top. Sprinkle with additional green onions if desired.
This dish is a real winner: simple to make and bursting with flavor! We loved this dish, because the chicken cooked up tender and juicy...and the sauce is so flavorful. It's a little sweet, a little tangy, and a little spicy. This is a meal I can see myself making very often -- especially on busy days.
