Holiday Entertaining | Soup Supper! | Slow Vacation Entertaining


A brace of weeks ago, I did a soup supper for a produce goodness vacation show.  I mean value it is a groovy alternative for tardily entertaining this vacation season.  


I prepared ii soups : Baked Potato Soup & Minestrone


I laid upwards a nutrient tabular array to display the soup in addition to provided "To-Go" soups for everyone to accept domicile - what a groovy gift to a busy family!





Baked Potato Soup

1 loving cup of butter
1 loving cup of flour
four cups of one-half & half
four cups of whole milk
common salt & pepper
four cups of ruddy potatoes, 1 inch cubes

Cook potatoes inwards H2O until tender - close 8 minutes.  Drain potatoes in addition to laid aside.

In a sauce pan, melt butter, in addition to then add together flour over depression oestrus in addition to whisk until smooth.  Let the flour create for but a infinitesimal - last careful non to burn!  Whisk inwards heavy cream - adding it all at once.  Whisk until smooth, in addition to then add together inwards milk.  Bring the soup to a simmer, stirring constantly.  Add potatoes but earlier serving.  Keep the oestrus on depression in addition to last careful non to scorch the bottom.

Optional garnish :
cheddar cheese
bacon, cooked & cubed
light-green onions


Minestrone Soup

1/4 pound of bacon, cubed
2 tablespoons of olive oil
1/2 loving cup of onions, 1/2 inch dice
2 cups of carrots, 1/2 inch dice
2 cups of celery, 1/2 inch dice
2 cups of fresh light-green beens, 1/2 inch dice
half dozen cups of chicken stock
1 - 12 ounce tin of whole tomatoes
four cups of cabbage, shredded
iii cups of spinach
1/2 pound of pasta
common salt & pepper
fresh basil
parmesan cheese

In a large stock pot, create bacon inwards olive oil, in addition to then add together onion, carrots, celery in addition to light-green beans.  Cook for close four minutes until they are tender.  Add chicken stock (may necessitate some depending on desired consistency).  Add tomatoes i at a time, but crushing them (squeezing) into the pot.  Bring to a simmer.  Add the cabbage, pasta in addition to common salt & pepper.  Cook for 10-15 minutes until pasta is tender.  Add spinach but earlier serving.  Served garnished amongst basil & parmesan.
