Halloween is tomorrow -- eek! If the date has snuck up on you this year, you need to act quickly. Today, I'm sharing a quick and easy popcorn-based snack mix that's perfect for Halloween munching. My Spooky Good Popcorn Snack Mix makes feeds a hungry group if you're planning an at-home Scary Movie Night celebration. This versatile, sweetly crunchy treat can also be bagged up in small portions and handed out when trick-or-treaters ring your doorbell tomorrow night. Make a batch tonight, and you're good to go for tomorrow!
I really like snack mixes like this, because they're easily customized to include your favorite flavors! To make your unique spin on this Spooky Good Popcorn Snack Mix, simply substitute your favorite Halloween candy. This time, I added Reese's Pieces and gummy candy corn...along with a drizzle of orange Candy Melts and semisweet chocolate. The idea is to have fun and let your imagination run wild. Easy to make, yummy to eat, and colorful? That's a winning trifecta to me, folks!
Spooky Good Popcorn Snack Mix

Ingredients (makes approx. 10 cups):
- 4.5 cups Corn Chex cereal
- 4.5 cups popped popcorn
- 1/2 cup Reese's Pieces candy
- 1/2 cup gummy candy corn (or traditional candy corn)
- 1 cup orange-tinted Candy Melts, melted per package directions
- 1 cup semisweet chocolate chips melted with 1 tbs. butter
For the caramel:
- 1 stick salted butter
- 1 cup firmly packed brown sugar
- 1/4 cup light corn syrup
- 1/4 tsp. baking soda
Directions:
Step 1: Add Corn Chex and popcorn to the largest mixing bowl you have. Set aside while you make the caramel. Add the butter, brown sugar, and corn syrup to a 4-cup measuring cup. Microwave for 2 minutes, then stir well to combine the melted ingredients. Immediately add the baking soda. NOTE: The baking soda will make the caramel foam up, so don't panic...simply stir vigorously!
Step 2: Immediately p0our the warm caramel over the cereal and popcorn in the bowl. Stir carefully to evenly coat the cereal and popcorn with the caramel. Microwave the mixture for 5 minutes. Stop to stir at least twice during this time to completely cover the popcorn and cereal with caramel. Evenly spread the coated mixture on a large rimmed baking sheet topped with parchment or foil.
Step 3: Before the caramel sets, sprinkle Reese's Pieces and gummy candy corn (or regular candy corn) on top of the mix. Drizzle with the melted orange Candy Melts and melted semisweet chocolate-butter mixture. Put the mix in the fridge to set -- approximately 30 minutes.
Step 4: Break the snack mix into bite-size pieces. To serve right away, place the mix in a fun Halloween bowl. If you're not serving it right away, store the mix in an air-tight container so the mix stays crunchy and fresh. This recipe makes 10 cups of snack mix, but the recipe is easily halved or doubled to meet your Halloween needs.
