Like a banana smoothie on a stick, these Banana Popsicles are perfect as a snack or pool-side refresher! There’s nothing easier to make than a good popsicle with a handful of ingredients I bet you already have in your kitchen!

Popsicle Madness


I pulled this popsicle recipe out of my collection of Summer recipes we prepared during our hottest days and saved for this very moment. With most of our readers based on the other side of the world, it pays to be prepared!


Seeing these photographs again brings all of these delicious memories back to us. Creamy, smoothie tasting popsicles with a subtle sweetness of honey, a touch of peanut butter saltiness and a dash of vanilla, all dipped in chocolate AND covered in crushed nuts… There’s nothing in a wrapper that compares to the flavour packed in these popsicles.


The Best Way To Make Popsicles


The mixture of these popsicles is thick. We tried making them runnier only to be disappointed with the results (think dripping banana/milk running down your hands only 2 seconds into eating). For this reason, please use a powerful blender or food processor.

Banana Popsicles Tips:



  • Bananas — start with ripe bananas. Not necessarily as ripe as you would use for banana bread, but close to it. The riper, the sweeter your Banana Popsicles will be.

  • Peanut Butter — we use smooth. You can also substitute it with almond butter or any other nut butter you have on hand. For nut allergies, leave it out all together and add a pinch of salt to the mixture.

  • Yogurt — use plain, Greek or Natural yogurt to add a slight tang to the popsicles and allow you to adjust your own sweetness and flavours.

  • Honey — used to sweeten the banana mixture. Adjust it to your taste after processing all of the ingredients together. Start with 1 tablespoon and go from there.

  • Chocolate — the best chocolate to use for popsicles is Magic Shell. If using melted chocolate, you need to work fast –> dip in chocolate, then nuts (if using) and immediately freeze again to set your popsicles for a few minutes, avoiding melting them again from the warmth of the chocolate.

Ingredients

  • 2 medium-sized ripe bananas peeled and broken into pieces
  • 1/4 cup smooth peanut butter or almond butter (optional)
  • 1 1/2 cups plain yogurt (Greek or Natural)
  • 1/4 cup milk
  • 1-2 tablespoons honey
  • 2 teaspoons pure vanilla extract
  • 1/2 cup Magic Shell (Ice Magic), or semi sweet chocolate, melted
  • 1/2 cup crushed peanuts optional

Instructions

  • Place bananas into a food processor bowl or blender, along with the peanut butter, yogurt, milk, 1 tablespoon of honey and vanilla. Puree or blend, while stopping every now and then to scrape the sides down with a plastic spatula, until smooth. (If mixture is too thick, add a little more milk to get it mixing.) Taste test and add more honey, if needed, to suit your tastes,
  • Divide the mixture into popsicle molds, tap molds on a kitchen bench to reduce air pockets and insert popsicle sticks. Freeze until frozen solid, (about 4-5 hours).
  • When ready to serve, place molds under warm running water for 3-5 seconds to remove popsicles with ease.
  • Dip into the melted chocolate and coat with crushed peanuts (optional).
