Like many of you, I’m making a conscious effort to eat a bit healthier in the new year. One of my goals is to include at least one meatless meal per week. I recently went to my local Walmart to pick up packages of MorningStar Farms® Grillers® Crumbles™ and Meal Starters® Steak Strips – along with some Great Value™ frozen chopped spinach -- to create a healthier meatless pasta dish. All three items were easy to locate in the freezer case.

My Lighter One-Pot Pasta Dinner conveniently cooks in a Dutch oven, and it’s ready to eat in about 45 minutes – making it perfect for a busy weeknight dinner. This pasta features MorningStar Farms® Grillers® Crumbles™ in place of ground beef, chunky organic marinara sauce, high-fiber bowtie pasta, mushrooms, and nutrient-rich Great Value™ spinach. The end result is a hearty pasta dish that’s lower in fat and calories than my typical pasta dinner.
Meatless One-Pot Pasta Dinner
Ingredients (makes 4-6 servings):
- 8 ounces MorningStar Farms® Grillers® Crumbles™
- 8 ounces Great Value™ frozen chopped spinach
- 2 cups high-fiber bowtie pasta
- ½ cup thinly sliced onion
- 2 cups sliced mushrooms
- 2 tsp. olive oil
- 2 cloves garlic, finely minced or chopped
- 3 cups broth [NOTE: I used beef broth, but feel free to use veggie stock to make this a 100% vegetarian dish]
- 24-ounce jar all-natural marinara sauce
- Salt & pepper to taste
- Pamesan cheese for garnish
Directions:
Step 1: Add 1 tsp. olive oil to a 5-quart Dutch oven over med-high heat. Add the sliced onion and garlic, and saute until the onion is translucent and starting to brown. Add the second tsp. of olive oil and the mushrooms and cook for 1-2 minutes, until the mushrooms begin to brown. Add the frozen spinach and stir until it cooks and combines with the other veggies. Add salt and pepper to taste.
Step 2: Add the broth, marinara sauce, bowtie pasta, and MorningStar Farms® Grillers® Crumbles™ to the Dutch oven. Stir well to combine all ingredients, and bring to a boil. When the liquid begins to boil, reduce heat to med-low and cover. Cook for 25 minutes, until the pasta is cooked.
Step 3: Add salt and pepper to taste and give everything a good stir to make sure all ingredients are evenly distributed into the pasta. Sprinkle each serving with a bit of parmesan cheese.
This simple pasta dish is a true win-win: easy to make, delicious, and only one pan to clean after dinner! Since we’re a two-person household, we had plenty of pasta left for our lunches the next day. The fact that this dish is lower in fat than my typical pasta dish is an added bonus! I promise that even the most dedicated meat lovers will not miss it at all – this dish is that tasty and robust. I served a green salad tossed with light vinaigrette on the side for a hearty, filling meal.
