Spicy Slow Cooker Plum Pork

I figured I should throw some slow cooker love your way with another delicious and easy slow cooker recipe. This recipe, like many of my recipes, was inspired by a sale on plums. It’s summer and that means stone fruit season so of course plums are on sale. The Chinese know what they are doing when it comes to plum sauce, so I gave it a little Chinese flair with soy sauce, rice vinegar, garlic, and ginger. Throw in some red pepper flakes for some heat, and you have yourself a deliciously sweet and spicy pork that comes together with very little work on your part. And the smell that will fill your house on this one is pretty incredible!
Prep Time: <5 minutes
Slow Cooker Time: 8 hours, low
Yield: serves 6 to 8
Ingredients
1 (3 to 5 lb) pork loin
1/4 cup soy sauce
1/4 cup rice vinegar
2 TB brown sugar
4 cloves garlic, minced
1 tsp ground ginger
1 tsp crushed red pepper flakes
1 white or sweet onion, sliced
6 ripe plums, pitted and sectioned
Instructions
1. Place pork loin in the bottom of a slow cooker.
2. Pour soy sauce and rice vinegar over pork. Sprinkle with brown sugar and minced garlic and season with ginger and red pepper flakes.
3. Top with onion slices and plum sections.
4. Cook on low 8 hours.
