Let’s face it: the holidays are hectic! However, I still need to make sure that we have a healthy and flavorful dinner to keep us fortified among all of the holiday shopping, present wrapping, etc. I love to combine fresh ingredients with select convenience items to create meals that can be ready and on the table in under an hour. That’s where items like Rosarita ready-to-use refried beans come into play! They save me valuable time, and they provide lots of great flavor. I recently paired Rosarita refried beans and frozen puff pastry with fresh pico de gallo, seasoned lean beef, and other convenient items to create my delicious Puff Pastry Taco Turnovers. They feature all of our favorite taco flavors in a portable turnover that can be enjoyed for lunch, dinner…or even a fun game day snack!
Rosarita ready-to-use canned refried beans are perfect for creating easy, delicious holiday meals and party appetizers. I went to my local Walmart to purchase a variety of canned + fresh ingredients to make my my Puff Pastry Taco Turnovers, which are paired with a simply delicious avocado-ranch dipping sauce. I found the Rosarita refried beans in the Hispanic Foods aisle. By using a combination of convenience and fresh products, dinner prep is simple – and the end results are delicious! As an added bonus, these turnover tacos can even be assembled during the weekend and frozen. Then, they can be baked for dinner during the hectic work week.
Puff Pastry Taco Turnover with Avocado Ranch Dipping Sauce
Ingredients (makes 1 dozen turnovers):
- 14-ounce can Rosarita Traditional Refried Beans
- 1 package frozen puff pastry
- ½ lb. ground round
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 1 tsp. dried cilantro
- ½ tsp. sea salt
- ½ cup prepared pico de gallo
- ½ cup shredded Mexican-blend cheese
For the dipping sauce:
- ½ cup prepared ranch dip
- 1 small avocado, peeled and diced
- ¼ cup milk
- ¼ cup pico de gallo
Directions:
Step 1: Heat a small sautee pan over med-high heat. Add the ground beef, garlic powder, chili powder, cilantro, and sea salt. Cook the meat until well browned, breaking up the meat and incorporating the spices as it cooks.
Step 2: Cut the puff pastry into 12 squares. For each turnover: spread 1 tbs. of the refried beans on a puff pastry square. Top with 1 tbs. of the taco meat, 1 tsp. of pico de gallo, and a bit of the shredded cheese. Fold the squares over, forming a triangle. Hint: Stretch the puff pastry as you tuck the filling into a pocket toward the back. Press the edges together.
Step 3: Place each turnover onto a rimmed baking sheet lined with parchment paper. Use a fork to crimp the ediges of the turnovers and ensure a tight seal while baking. Use a paring knife to cut a small slit on top of each turnover – this lets steam escape during cooking! Sprinkle the top of each turnover with a bit more sea salt, garlic powder, and cilantro. Bake until the puff pastry is puffed and golden brown – about 20 minutes.
Step 4: While the turnovers bake, you have a pocket of time to make the dipping sauce. Add the avocado to a small bowl. Smash until it’s a smooth paste. Add the ranch dip and milk to the mashed avocado and whisk until completely combined and smooth. Stir in the pico de gallo and refrigerate until you’re ready to serve. To serve, place a bowl of the dipping sauce in the middle of a colorful platter and arrange the baked taco turnovers around the sauce.
These taco turnovers are a fun spin on traditional tacos -- they remind me a bit of savory empanadas! They’re crispy and light on the outside, and the inside is bursting with taco flavor. The Rosarita refried beans cook up perfectly creamy, the taco meat is lightly spicy, the pico de gallo provides a pop of color and spice…and the cheese? It’s gooey and melty and brings all of the flavors together. I have to say that the dipping sauce really takes these taco turnovers over the top. It’s creamy and perfectly seasoned – and it’s also great for dipping if you serve tortilla chips on the side!
