Chocolate-Peppermint Puff Pastry Bites for #ChristmasWeek

One of the ironies of my life is that I don't just have A sweet tooth -- I have an entire set -- but baking is something I don't do that much of. Honestly? Measuring and all that preciseness makes me twitchy. Can I bake? Yes...pretty well, actually. I just prefer to get in the kitchen and see what happens. If you do that when you bake? Yeah...you might end up with something inedible. The recipe I'm sharing today is so easy...and so good...that anyone can make it and feel like a blue-ribbon pastry chef! My Chocolate-Peppermint Puff Pastry Bites are gooey and bursting with peppermint flavor. If you've never baked with puff pastry, you really need to jump on the train!

Puff pastry is one of my secret weapons in the kitchen! With a package of frozen puff pastry on hand, you can whip up easy and fabulous appetizers and desserts that will make everyone ooh and ahh...without stressing you out in the project. It bakes up flaky and golden, and you can let your imagination go wild with fun fillings and toppings! When you see how easy these turnovers are to whip up, you're going to want to whip up a batch ASAP. Trust me...I would never steer you wrong!

Chocolate-Peppermint Puff Pastry Bites
a Weekend Gourmet Original

Ingredients:
  • 1 sheet frozen puff pastry, thawed
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate peppermint chips or baking disks
  • 1/2 cup milk chocolate melting wafers
  • 1/2 cup white chocolate melting wafers
  • 1/4 cup crushed peppermint candies
Directions:
Step 1: Preheat oven to 400. Line a large rimmed baking sheet with parchment. Carefully unwrap the puff pastry onto the parchment and cut into four squares. Separate the squares so you have room to assemble. Place 1 tbs. of chocolate chips along the lower third of the squares, then top with 3 white chocolate-peppermint disks OR 1 tbs. of white chocolate-peppermint chips. 
Step 2: Carefully fold the corners of each square down and over to create triangles, making sure the chocolate is completely enclosed. Use a fork to firmly press the edges and make tight seal. Bake the turnovers until they're puffed and golden brown -- 10-15 minutes. I like to turn the baking sheet around halfway through for even browning.
Step 3: Melt the chocolate wafers and white chocolate wafers in two small bowls. Drizzle the turnovers with the melted chocolates and sprinkled the crushed peppermint on top. Let cool until the chocolate drizzle hardens, then serve. I like to serve this with peppermint hot chocolate for a special bedtime treat or decadent weekend breakfast!
These turnovers are SO GOOD...and nobody has to know what a snap they are to whip up! Crunchy, buttery puff pastry and a double dose of chocolate, white chocolate and peppermint. These turnovers taste like Christmas to me! If you love chocolate and peppermint, do yourself a favor and give these a try this holiday season. To make 8 turnovers, simply use an entire package of puff pastry and double the rest of the ingredients. If you want your puff pastry bites smaller, simply cut your squares of puff pastry smaller and adjust the amount of filling accordingly.
