#SundaySupper Gifts from the Kitchen...Featuring Peppermint Stick Cookie Truffles
The theme for this week's #SundaySuper is Gifts from the Kitchen, which is hosted by Susan from Peppermint Surprise Truffles. These cookie truffles are a snap to make and contain only a few simple ingredients. Feel free to decorate them in any festive holiday color scheme...I used white chocolate and red candy melts to stay with the peppermint stick theme. These truffles make fabulous holiday gifts. For a simple presentation, put two or three of the paper-lined truffles into a small gift box lined with colorful tissue paper. You could also pair a half dozen with a holiday-themed serving plate as shown here. The main idea is to have fun with it!

Step 1: Add the following ingredients to a mixing bowl: 9 ounces shortbread cookies (crushed), 6 ounces Philly Indulgence white chocolate cream cheese spread, 1/2 cup Andes peppermint crunch baking chips, and 1/2 tsp. peppermint extract. Mix on low speed until everything is incorporated and the mixture looks like mud.
Step 2: Roll mixture into small balls. Place on a pan that's been lined with parchment paper -- you should get about 2 dozen truffles. Place the pan in the fridge or freezer to chill for about 30 minutes. When you're ready to dip, melt 4 ounces white chocolate and a package of red candy melts in small bowls. Using a skewer, dip each truffle into the chocolate. Sprinkle some crushes peppermint candies on top, before the chocolate sets.
Step 3: If the truffles are sufficiently chilled, the chocolate should set up very quickly. If not, no worries...you can place the dipped truffles in the fridge to make sure the chocolate completely firms up. To serve, place in colorful miniature paper wrappers. From there, you can place on a plate or box up for gift giving. NOTE: Since the truffles contain dairy, I keep them stored in an air-tight container in the fridge and remove them 15 minutes before serving or packaging to give.
These truffles are totally yummy, with a pronounced peppermint flavor thanks to peppermint extract and candy pieces inside...and a sprinkle of peppermint on top. These are also a fun project to make with kids -- they can help with rolling the truffles and sprinkling the candy on top. You could easily make a batch of these and my Peppermint Surprise Truffles and mix-and-match for the chocolate lovers on your gift-giving list!
