Not Your Mama's Tuna Salad...and the Winner of the Ayala's Herbal Water Giveaway!

I freely admit that I didn't grow up eating tuna salad. In fact, until a few years ago? It was relegated to my least-liked foods list. Then I discovered mild albacore tuna packed in water and changed my tune a bit. Since then, I'm always on the lookout for tasty tuna salad recipes. This week I found one that's a keeper...delicious, and a little bit different. Nary a pickle or hard-boiled egg is in sight. It's perfect for packing in a work or school lunch...because a gal can only eat so many filet 'o fish sandwiches during Lent without her pants getting snug ;)!

I received a loaf of Nature's Pride Hearty Wheat With Flax bread this week as part of the Foodbuzz Tastemakers program. This bread contains flax seeds (a great source of Omega 3-ALA), olive oil, and 22 whole grains. Each slice contains 100 calories + 3 grams of healthy fiber. The fact that it also tastes great is an added bonus! I decided to pair this yummy bread with my tuna salad for a healthy and delicious sandwich.

Not Your Mama's Tuna Salad

Step 1:  To make the tuna salad, combine the following ingredients in a mixing bowl: 12-ounce can albacore tuna (water drained), 6-ounce container fat-free Greek yogurt, zest and juice of one lemon, 1/3 cup golden raisins, 1/2 cup finely diced celery, 2 sliced green onions, salt and pepper to taste, 1 tsp. curry powder, and 1 tbs. chopped fresh dill.

Note: A little fresh dill goes a long way...if you're not a huge fan of dill, I strongly suggest reducing the amount by half.


Step 2:  Stir well to combine all the ingredients. Spoon the tuna salad into a container and chill for at least an over. If you have time, overnight is best to fully develop all the flavors.


You can serve this tasty tuna salad over salad greens, spread on crackers, or as a delicious sandwich. I lightly toasted some of the Hearty Wheat With Flax bread, spread it with a bit of light mayo, added some lettuce and tomato, and a scoop of the tuna salad. 


This tuna salad is a nice collection of flavors, and I like that there's just enough yogurt to bind the ingredients without making it gloopy. The curry flavor is the perfect flavor in the background, and the golden raisins are a sweet surprise.
