Sugar Free Sparkling Cranberry-Lime Mocktail a Weekend Gourmet Original
Ingredients (for approx. 12 beverages):
For the simple syrup:
- 1 cup KetoseSweet+ liquid sweetener
- 1.5 cups frozen cranberries
- 3 large pieces orange pee
- 1/2 tsp. rum extract
- 1 tsp. cinnamon
Directions: Step 1: Add the KetoseSweet+ liquid sweetener, cranberries, orange peel, rum extract, and cinnamon to a small saucepan. Give the ingredients a stir and turn heat to medium.
Step 2: Cook until the cranberry mixture is simmering, but do not boil. Once the mixture simmers, cook for five minutes. The cranberries should not burst, but the syrup will thicken and turn magenta pink.
Step 3: Drain the simple syrup in a colander to remove all solids. You will have approximately 1 cup of cranberry-infused simple syrup. Store covered in the refrigerator until the simple syrup is chilled. It will thicken a bit, so don't panic! Once you add the liquid ingredients and stir, it will dissolve perfectly.
Step 4: To assemble the mocktails as a punch for a group of people: add the simple syrup, lime juice, and sparking water/diet lemon lime soda to a large pitcher. Stir well to combine all of the ingredients. To make a single beverage: pour 1.5 tbs. of the simple syrup into a glass. Add 2 tbs. lime juice and 8 ounces of sparkling water/lemon-lime sugar free soda. Stir to combine and add ice. Just before serving, garnish with a lime wedge and several frozen cranberries.

This sweetly sour mocktail is fizzy fun in a glass! It would be an ideal family-friendly beverage to ring in the new year...and it would make a great sugar-free beverage option for NFL playoff parties. The homemade simple syrup lends a pretty pink color to the beverage. It also packs a fruity punch from tart cranberries and citrus peel...as well as warm notes from the rum extract and cinnamon.
