Slow Cooker Comfort Food #SundaySupper...Featuring Slow Cooker Asian Garlic-Ginger Meatballs #meatballs

The hectic Fall season is here...cooler temperatures and hectic schedules are the norm these days. That means I rely on my slow cooker more than ever! I can start a meal early in they day, then take care of errands and other events while dinner cooks away. This week, #SundaySupper is featuring Slow Cooker Comfort Foods that are perfect for cooler temperatures. My contribution to this week's event is Slow Cooker Asian Garlic-Ginger Meatballs. These versatile meatballs can be served over rice or noodles for a delicious and easy dinner...or they can be served as a delicious finger food at your next game day spread!

These meatballs are made with a combination of lean ground turkey and a bit of ground pork. They're flavored with fresh ginger, garlic, green onions, hoisin sauce, and a bit of chile paste. Chopped water chestnuts provide crunch and texture. The meatballs are browned and cooked in a sauce featuring ponzu, more hoisin and chile paste, and a bit of white balsamic. The end result is moist meatballs in a sauce that packs a ton of umami, along with a bit of sweetness and spice. We absolutely loved them!

Slow Cooker Asian Garlic-Ginger Meatballs

Ingredients (makes approximately 16 meatballs):
  • 1 lb. 93% lean ground turkey
  • 1/2 lb. lean ground pork
  • 1 tbs. grated fresh ginger
  • 2-3 garlic cloves, chopped
  • 2 green onions, sliced
  • 1/2 cup chopped water chestnuts
  • 1/4 cup hoisin sauce
  • 1 tbs. chile sauce
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 1-2 tbs. garlic-flavored olive oil
For the sauce:
  • 1/4 cup ponzu (can use soy sauce instead)
  • 1/2 cup hoisin sauce
  • 1 tbs. chile sauce
  • 1/4 cup white balsamic vinegar
Directions:
Step 1: Add the ground turkey, ground pork, ginger, garlic, green onions, water chestnuts, hoisin sauce, chile sauce, egg, and panko to a large mixing bowl. Using pristinely clean hands, combine the ingredients until completely combined. Shape the mixture into approximately 16 meatballs.
Step 2: Add the garlic-infused olive oil to your slow cooker using the Brown mod. Add the meatballs in two batches and brown on both sides. NOTE: If your slow cooker does not have a Brown mode, brown the meatballs in a skillet and them to your slow cooker.
Step 3: Make the sauce by combining the ponzu, hoisin sauce, chile sauce, and white balsamic. Whisk well to combine and pour evenly over the meatballs. Use a rubber spoon to carefully coat each meatball with sauce. Cover the slow cooker and cook the meatballs on Low power for 3 hours. Serve the meatballs over rice or noodles, spooning a bit of sauce over each serving.
These meatballs are so tasty! The ground turkey is lean, but the ground pork provides just enough fat to keep them from drying out. The garlic, ginger, and green onion are an excellent flavor profile -- and the water chestnuts provide a perfect amount of crunch. The sauce is a savory, with the perfect amount of sweetness and spice. This recipe will definitely be in heavy rotation at my house this Fall!
