Leftovers | Bolognese Amongst Rigatoni, Cream, Peas & Parmesan

The best leftover creations are those that decease recipes of their own, worthy of making exclusively on their ain merit. I typically brand huge batches of Bolognese (meat sauce for us normal folk... hither is my recipe), I ever tuck unopen to away inwards the freezer.  So, this isn't actually a side yesteryear side nighttime leftover repast for us, exactly a "hey, I tin line it addition unopen to peas out of the freezer too bring a yummy dinner inwards nearly xv minutes without going to the store" type of dinner.  We all withdraw ane of those to autumn dorsum on.

Leftover Bolognese
with rigatoni, cream & peas

1 lb. of rigatoni (or penne) pasta
ocean salt
...
two cups of bolognese sauce
*mushrooms - if I had had unopen to on hand!
1/3 loving cup of cream
1 loving cup of frozen peas
1/4 loving cup of parmesan

Cook pasta inwards large pot of salted boiling water.  Meanwhile, reheat bolognese inwards a large saute pan.  Once bubbly, add together cream too simmer for nearly three minutes.  Drain pasta too add together to bolognese, tossing to coat.  Add peas too bend in.  Finish amongst parmesan.







This was inspired yesteryear a local Italian bistro that nosotros dear (Bella Napoli, for locals).  Restaurants bring to live smashing at utilizing leftovers to survive.  I'm ever looking for inspiration from eating seat menus.  Next upwards is a classic minestrone from this same Italian spot.  They cease offering their soups during the warmer months, too thus I had to figure it out for myself.  It sounds peculiarly proficient on this rainy hateful solar daytime : )
