Summer Vegetable, Sugariness Corn & Chicken Chowder

Summer Vegetable
Sweet Corn Chowder


ii Chicken Breasts (skin-on/bone-in)
olive oil
tabular array salt & pepper

ii tablespoons of olive crude oil
three carrots, peeled, minor dice
ii celery ribs, peeled, minor dice
1 minor white onion, minor die
1 sm tin chopped greenish onion
1 sm tin of diced tomatoes
four cups of chicken broth
four cups of water
four ears of sugariness corn
Sea Salt
.....
1 minor zucchini
1 minor yellowish squeeze
cilantro

On a baking sheet, drizzle the chicken amongst olive oil, tabular array salt as well as pepper.  Bake inwards the oven for 25-30 minutes at 350 until cooked through.  Remove from oven as well as allow cool.  When cool, take meat as well as shred into bite-size pieces.





In a large stock pot, saute onions, carrots as well as celery inwards olive crude oil until soft.  Add greenish chiles, tomatoes, chicken broth as well as water.  Season amongst 1 tablespoon of bounding main tabular array salt as well as 1 teaspoon of pepper.  Bring to a simmer.



Cut corn kernels off of cobs as well as add together cobs as well as one-half of corn kernels.  Reserve the other one-half of the kernels to add together but earlier serving.  Continue simmering the soup uncovered for thirty minutes as well as upwardly to ii hours.  (I afterwards added a quaternary cob per the recipe, after I took this photo!)
