Tilapia Wrap Sandwiches with Feta-Avocado Slaw...Featuring Gorton's Tilapia Fish Sticks

I'm always on the lookout for ingredients that help me create tasty and quick weeknight meals. One of my favorite recent food finds is Gorton's Premium Tilapia Fish Sticks. Unlike the minced fish sticks of my youth, these delicious fish sticks are cut from whole mild tilapia fillets. They're larger than the typical fish stick, and they bake up perfectly crispy. We absolutely love these premium fish sticks, so I always have a box in my freezer. I wanted to use them to create a fabulous sandwich that can be whipped up in less than 30 minutes -- making them perfect for even the busiest nights. My Tilapia Wrap Sandwiches with Feta-Avocado Slaw are bursting with fun flavors and textures. Crispy Gorton's tilapia fish sticks and a quick-make slaw flavored with feta and creamy avocado are rolled inside soft lavash flatbread. Simply add some chips and dinner is ready!

Tilapia Wrap Sandwiches with Feta-Avocado Slaw

Ingredients: (makes 3 large wrap sandwiches):
  • 12 frozen Gorton's Premium Tilapia Fish Sticks
  • Creole seasoning to taste
  • 3 rectangular lavash flatbreads
  • Potato chips to serve on the side
For the slaw:
  • 3 cups ready-to-use tri-color slaw mix
  • 3 green onions, thinly sliced
  • 3/4 cup crumbled feta cheese
  • 1 small avocado, pitted and diced
  • Juice of 1 lemon + 1/4 cup milk
  • 1/2 cup fat free plain Greek yogurt
  • 1 tbs. Creole seasoning
Directions:
Step 1: Make the slaw. Add the cole slaw mix, green onion, feta, and avocado to a large mixing bowl. Combine the lemon juice, milk, Greek yogurt, and Creole seasoning in a small bowl with a whisk until a dressing is formed. Pour the dressing over the slaw ingredients and stir until the ingredients are combined and evenly coated with the dressing. Be gentle so you don't break up the avocado too much. Set aside in the fridge until you're ready to assemble the sandwiches.
Step 2: Sprinkle the Gorton's Premium Tilapia Fish Sticks with a generous amount of the Creole seasoning. Cook the fish sticks according to package directions -- until they are crispy and golden brown.
Step 3: Assemble the sandwiches. Place a lavash bread on your work surface. Add one-third of the slaw to the top of the lavash and spread it out, leaving a 1-inch border all the way around. Lay four cooked fish sticks 2x2 on one end of the lavash, about 1 inch in from the border. Turn the lavash so it is vertical, with the fish sticks at the bottom. Carefully roll the sandwich up tightly, away from you. Use a serrated knife to cut it on the diagonal. Serve immediately with your favorite chips.
