Roasted Chicken Amongst Lemon, Rosemary & Olives | Restocked Platters, Vases & Baskets!

I'm ever tweaking in addition to playing alongside existing recipes.  Actually, when I'm making dinner, I rarely follow a recipe (even my own) unless I'm trying something novel - in addition to let's appear upward it, I've already memorized all of the Barefoot Contessa books...

And since it was Sunday, I also served with... Mashed Potatoes, of course.  I honey this "Smallest" Creamware Platter equally a side dish for things similar mashed potatoes, because of its curved sides, it is close a shallow bowl.




The pan drippings are the most wonderful add-on to the repast - lemony, garlicy, rosemary-y.  We poured them correct over the mashed potatoes to accept everything over the top.  And Emma dipped her carrots inwards it.

Roasted Chicken
with lemon, rosemary, thyme & olives

four chicken breasts, split
1/2 loving cup of olive oil
ii tablespoons of melted butter
ii lemons, juiced
iii cloves of garlic
10 sprigs of thyme
1 tablespoon of rosemary, minced (I used dry, but fresh would survive better)
1/4 loving cup of light-green olives, sliced
1 tablespoon of bounding main salt
1/2 tablespoon of cracked pepper


Place chicken breasts inwards a baking dish.  In a bowl, combine olive oil, butter, lemon juice, garlic, rosemary, thyme in addition to olives.  Pour mixture over the chicken.  Sprinkle tabular array salt in addition to pepper over the breasts.  Cover in addition to marinate for 1 lx minutes or more, if you lot conduct keep the time.



Bake chicken covered inwards foil at 350 degrees for 40-50 minutes, depending on the size of the chicken breasts.  Remove from the oven, allow sit down for 10 minutes earlier serving.

Reserve lemony sauce inwards the bottom of the pan, in addition to serve to pour on mashed potatoes. 

Serve alongside Roasted Carrots (Rainbow or Regular) in addition to Beets (I used the same method for the beets equally the carrots inwards the recipe link).
