Peanut Butter & Jelly Bars




Another inspiration from The Barefoot Contessa...  Peanut Butter & Jelly Bars.  I highly recommend y'all alone brand these if y'all get got person or multiple people to portion them with.  They are good.  Crave-able good.  In fact, only writing close them correct straight off is making me crazy for them.  It is settled.  I'll survive making only about other batch of them today.  I intend I'll get got one, salve i for Mike, in addition to then get got the residuum over to the neighbor's thence I don't complete them off earlier the goal of the day.

When I get-go made them a span of weeks ago...
Jenny : Should I add together oats to these to brand them sort of healthy?
Mike : Nahhh.
Jenny : Ya, you're right.  Nahhh.  But, in addition to then they would survive sort of similar breakfast bars.  I could consume them for breakfast.
Mike : They're cookies, y'all won't desire them for breakfast.
Jenny : Ya, you're right.

Guess what?  I did desire them for breakfast.  Lunch in addition to dinner....

They are everything you'd promise them to be.  Dense, peanut buttery, in addition to crumbly amongst a layer of sweetness raspberry jam that has thicken inwards the oven.  For a peanut butter fanatic, they are divine.  Let me know if y'all endeavour them amongst oats - I'd dearest to listen how it goes.  I did cipher differently from the master copy recipe except I used chunky PB in addition to added extra nuts to the top.  I similar the crunchy texture they add.  Oh, in addition to this is only one-half of the master copy recipe.  There is no demand to tempt yourself past times an entire large pan of these.  No need.

Peanut Butter & Jelly Bars

1 stick of butter, at room temperature
3/4 cups sugar
1 teaspoon vanilla
1 extra-large egg
1 loving cup of crunchy peanut butter
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
3/4 teaspoon kosher salt
3/4 loving cup of raspberry jam or other jam
1/2 loving cup salted peanuts, coarsely chopped

In a mixer, cream together butter in addition to saccharide for ii minutes.  Add vanilla, egg in addition to peanut butter.  Mix until good incorporated.  Add flour, baking pulverisation in addition to salt.  Mix together on low, only until incorporated.

Grease a 9x9 pan.  Put 2/3 of the mixture inwards in addition to press it into the bottom.  Spread the jam over the dough layer.  Add the chopped peanuts to the remaining 1/3 of the dough mixture.  Mix it together (with your hands) until the peanuts are mixed in.  Crumble the mixture over the jam layer.

Bake at 350 for thirty minutes.  Let it cool for xx minutes earlier cutting to allow the jam set.


It is basically a peanut butter cookie dough.  Press 2/3s of it inwards the bottom of the pan.


Spread the jam.  When it cooks, it bubbles upward in addition to thickens into a chewy gel.  So good!
