Pizza of Dreams with Lobster and Lemon-Garlic Cream Sauce...Inspired by The Wynn Las Vegas' Lake of Dreams
One of our favorite cities to vacation in is Las Vegas – there’s just so much to see and do! We especially enjoy all of the fabulous restaurants, amazing shows, and over-the-top casino hotels. I was recently invited to take part in a fun Vegas-themed promotion! The folks at Vegas.com are pizza fanatics, and they invited a select group of food bloggers to share an original pizza recipe in connection with the annual International Pizza Expo that is held in Las Vegas every year. They feel – and I wholeheartedly concur – that pizza is one of those foods that you can’t help but love. Pizza is incredibly versatile, offering endless creative possibilities. Vegas.com challenged me to create a unique pizza inspired by one of my favorite Las Vegas Hotels. We’ve vacationed in Las Vegas several times, so we’ve stayed at and visited most of the casino hotels located on The Strip. One of our favorite casino hotels is The Wynn. It has lots of wonderful sites to see, from the seasonal floral decorations locations inside the main entrance…to amazing multimedia displays that take place nightly at the Lake of Dreams.

The dazzling Lake of Dreams at The Wynn inspired me to create my original recipe for Pizza of Dreams with Lobster and Lemon-Garlic Cream Sauce! This over-the-top pizza is made with indulgent ingredients that remind me of the elegant atmosphere at The Wynn. Artisan pizza dough is spread with a homemade lemon-garlic cream sauce that’s covered with a blend of flavorful Italian cheeses. The pizza is then liberally topped with chopped lobster tail, caramelized shallots, sweet baby heirloom tomatoes, and a generous amount of fresh basil. This pizza recipe is my personal dream pizza! It’s perfect for an at-home date night…or for entertaining friends. Add a simply dressed green salad and a nice bottle of well-chilled white wine, and you've got a gourmet meal that you can enjoy at home!
Pizza of Dreams with Lobster and Lemon-Garlic Cream Sauce
a Weekend Gourmet Original
Ingredients (makes 1 pizza):
- 1 pizza crust – purchase a pre-made crust, or make your favorite pizza dough
- 1 cup chopped lobster tail meat
- 1 cup halved baby heirloom tomatoes
- 1 medium shallot (peeled and sliced), sautéed in 1 tbs. butter
- 3 large basil leaves, cut into a chiffonade
- 1.5 cups shredded Italian-blend cheese [NOTE: I used one with mozzarella, Asiago, fontina, and smoked provolone]
- 2 tbs. butter
- Juice and zest of 1 medium lemon
- 2 cloves garlic, finely chopped or grated
- Enough Chardonnay wine to make ½ cup total when added to the lemon juice
- ½ cup half and half
- 2 tsp. cornstarch
- Salt & pepper to taste
Directions:
Step 1: Add the butter to a saucepan over med-high heat. When the butter is melted and bubbly, add the lemon zest and garlic. Saute for 30 seconds. Combine the lemon juice and enough Chardonnay in a measuring cup to make 1/2 cup of liquid total. Add the mixture to the saucepan and cook for 1-2 minutes. Meanwhile, completely combine the half and half and cornstarch in a small bowl with a whisk. Add this mixture to the saucepan and whisk to completely incorporate. Lower heat to medium and cook -- whisking -- until the mixture thickens into a creamy sauce. Add salt & pepper to taste, then set aside to cool.

Step 2: Preheat oven to 425. Spread the creamy sauce onto a pizza crust, nearly to the edge. Top with the shredded Italian cheese blend, almost to the edge of the creamy sauce. Sprinkle the basil evenly on top of the cheese layer.Step 3: Arrange the lobster meat, halved baby heirloom tomatoes, and caramelized shallots on the top of the pizza. Bake directly on the hot oven rack for 10 minutes. The cheese and sauce should be bubbly, and the pizza crust should be golden brown. To serve, cut the pizza into six slices.
This pizza is amazing! The chewy and crunchy crust is the first thing you notice when you enjoy a slice. Then, you notice the citrusy garlic punch of the cream sauce. The combination of sweet lobster, caramelized shallots, herbal basil, and sweet baby tomatoes works really nicely with the lemony cream sauce. Put it all together, and you have an over-the-top gourmet pizza experience! I hope you'll give my Pizza of Dreams a try very soon -- it's perfect for enjoying during the Lenten season too.
