Cherry Almond Shortbread Middle Cookies | Valentine's 24-Hour Interval Cookies





This is my outset fourth dimension making shortbread cookies.  I had never actually had much interest... equally you lot know, Sugar Cookies are my specialty.  I thought, what could live amend than a Sugar Cookie?  After mowing through a box of Girl Scout Peanut Butter Sandwich Cookies, I got addicted to that crumbly, sandy texture of shortbread.  Combine that with, Valentine's Day too a craving for the Cherry Almond Cupcakes I made final Spring... boom, Cherry Almond Shortbread Heart Cookies are born!


These non to sweet, crumbly, buttery, sophisticated cookies are the perfect Adult cookie.  They convey a fragile texture too flavour that overly decadent cookies (think double chocolate chunk...) can't match.  The add-on of dried cherries gives a touching on or cherry too tartness that is magical!  And similar almost expert things inwards life, they are simple.  Only a duo of ingredients.  No leavening, no eggs.  Just a classic too elementary cookie.

Cherry Almond Shortbread

3/4 pound unsalted butter, room temperature
i loving cup sugar
i teaspoon vanilla extract
i teaspoon almond extract
iii 1/2 cups all-purpose flour
1/4 teaspoon salt
i 1/2 cups minor diced dried cherries

In a mixer, cream together butter too saccharide for iii minutes.  Add vanilla too almond.  Slowly stir inwards flour too salt.  Mix until mixture begins to come upwardly together into a ball.  Add diced cherries.  Dump the mixture onto a floured surface too shape into a disk.  Wrap inwards plastic twine too chill for xx minutes (if you lot convey time).

Roll out the dough to 1/4 inch (I similar them thick) too cutting into shapes.  Bake at 350 degrees on a silpat lined baking canvas for 18-20 minutes, until the edges chocolate-brown only slightly.
