I sit around with a jar of Nutella and a spoon way more than I would care to admit. I mean, it’s a good thing Costco has such an amazing price on giant jars of Nutella because otherwise I may go bankrupt with my Nutella habit. Actually putting the Nutella in with something makes me feel better about how much I consume. Especially when it involves a whole grain like oatmeal. It’s healthy, right? Well, maybe not with all that sugar and butter, but whatever, it’s better than eating it by the spoonful.


 


Anyway, I was in one of those moods for dessert, but felt the guilt of the spoon, so I decided to make some peanut butter and Nutella no bake cookies. Oh heavens, it’s way too easy and way too delicious. I took my classic recipe for no bake cookies that I’ve been using for years, and worked in Nutella.

This recipe is super easy to make and is perfect for an adventure in cooking with kids. My kids eat peanut butter Nutella sandwiches as their go-to lunch of choice, so this recipe is right up their alley. The first step in the recipe is on the stove, but I have found that this is a perfect way to introduce kids to the stovetop. All they have to do is stir. Just keep a close eye on them and give them fare warning about the heat and they are good to go! My kids have been cooking on the stove as young as 4. I promise, they can do way more than you think!


 


Be sure to use old fashioned roll oats in this recipe. I have found that they give a far better texture than instant oats which are a bit too small and powdery. And then there’s steal cut rolled oats that are far too chewy for a no bake cookie.

Servings: 15 Cookies


Ingredients

  • 1 cup sugar
  • 4 tablespoons salted butter
  • 1/4 cup milk
  • 1/4 cup creamy peanut butter
  • 1/4 cup Nutella
  • 1 1/2 tsp vanilla extract
  • 2 cups old fashioned rolled oats

Instructions

  • In a medium-sized saucepan, combing the sugar, butter and milk. Bring to a boil over medium-high heat while stirring constantly.
  • Once boiling, remove from heat and stir in the peanut butter, Nutella, and vanilla until smooth.
  • Add in the oatmeal and stir until well combined.
  • Drop by the spoonful onto wax paper and let cool.
