I hope you had a wonderful week! The week started out a bit slow as Kevin returned home from a snowboarding trip with his buddies. We also celebrated Jude’s 9th birthday (!!) with homemade dog treats and a long hike on Tuesday. I finally got back into the swing of a usual work day by midweek and am THRILLED that a new month starts this weekend! You know what that means…


April Baking Challenge!


But first, let’s review what the baking challenge is.



What is the Baking Challenge?



  • On the 1st of every month, I will post a new recipe complete with a quick how-to video, plenty of tips, tricks, and photos.

  • I want you to bake the recipe yourself during that month! Come back and tell me how it went.

  • If you’d like, share your photos throughout the month using #sallysbakingchallenge on Instagram or email me, tweet me, or upload a photo of your recipe to my Facebook page. I want you all involved!

  • If you don’t like a particular flavor in that month’s recipe, there will be an alternate Monthly Baking Challenge recipe.

Recipe: Sky High Chocolate Mousse Pie


March’s baking challenge was a chocolate pie. This was a more complicated recipe, so I was nervous that not as many would participate in March. Chocolate must be your love language (duh!) and I truly appreciated seeing so many of these pies on Insta, Facebook, and all the pies coming through my inbox! You made some towering beauties with major height. April Baking Challenge


I’ve been looking forward to April’s challenge for over a month and will publish it on my blog tomorrow, April 1st. The challenge this coming month is more of a tutorial than a recipe. We’re going to test our piping skills and pipe two-toned frosting roses together. I’ve been getting lots of requests for cupcake decorating posts, so this was a natural fit. Plus spring’s on the horizon and blooms are popping up everywhere outside our windows. And now on our cakes and cupcakes. We shot a video for the tutorial that I’ll include in tomorrow’s post. If you want to get prepared, you’ll need a piping bag, some food coloring (I prefer gel colors) and Wilton 1M tip. Come back tomorrow for my standard vanilla frosting recipe, step-by-step pictures, video, and the alternate April recipe if frosting roses just aren’t your thing!

PS: What did you think of March’s baking challenge recipe? One reader said she added a drop of peppermint extract to the mousse so her pie was mint chocolate mousse! Obsessing over that idea and am looking for any excuse to try it.
