Mashed Potato Quesadillas


Time to Make It: 5 minutes

Yield: 1 quesadilla


Ingredients


2 tortillas

2 tablespoons cranberry sauce

1/2 cup shredded cheese

1/2 cup mashed potatoes


Instructions


1. Spread cranberry sauce over one of the tortillas. Sprinkle half the cheese over the cranberry sauce. Smoosh mashed potatoes out over tortilla. Top with remaining cheese and top tortilla.


2. Cook on a heavy skillet over medium heat until browned and crisp outside and cheese is melted.

Turkey Roll-Ups


Time to Make It: 5 minutes

Yield: 1 roll


Ingredients


1 flatbread

2 tablespoons cream cheese

1 tablespoon cranberry sauce

1/4 cup chopped turkey


Instructions


1. Flatbread may need to be heated to roll, depending on the flatbread. Try rolling it up first. Heat in the microwave 10 seconds if needed to get it to roll.


2. Spread cream cheese over flatbread. Top with cranberry sauce and chopped turkey. Roll and slice.

Turkey Manicotti


Hands on Time: 20 minutes

Ready In: 45 minutes

Yield: Serves 4-6


Ingredients


1 package manicotti shells, cooked

2 cups chopped turkey

4 fresh basil leaves, chopped (or 1 tsp dried basil)

2 cups shredded mozzarella cheeese

12 ounces ricotta cheese

1 1/2 cups cranberry sauce*


Instructions


1. Preheat oven to 400 degrees. Lightly grease a 9×13 baking pan.


2. In a small mixing bowl, stir together turkey, basil, 1 cup mozzarella, and ricotta until combined.


3. Stuff in cooked manicotti shells and place in prepared baking dish. Sprinkle remainder of cheese over the shells and smother with cranberry sauce.


4. Bake at 400 degrees for 25 minutes.


*you can use a marinara/spaghetti sauce in place of the cranberry sauce.

Cran-Turkey Salad


Time to Make It: 5 minutes

Yield: 1 cup turkey salad


Ingredients


1 cup chopped turkey

2 tablespoons cranberry sauce

1 tablespoon mayonnaise

1 celery rib, chopped

1 tablespoon chopped cilantro


Instructions


1. In a small mixing bowl, stir together turkey, cranberry sauce, mayo, celery, and cilantro.


2. Serve on bread as a sandwich.

Turkey Enchilada Casserole


Hands on Time: 10 minutes

Ready In: 40 minutes

Yield: Serves 8


Ingredients


2 cups chopped turkey

1 jalapeno, minced

1 bunch cilantro, roughly chopped

1 cup salsa verde

1 cup sour cream

1/2 teaspoon salt

1/2 teaspoon chili powder

1 teaspoon ground cumin

3 cups shredded mozzarella cheese

28-32 corn tortillas


Instructions


1. Preheat oven to 375 degrees. Lightly grease a 9×13 baking pan.


2. In a small mixing bowl, stir together turkey, jalapeno, cilantro, salsa verde, sour cream, slat, chili powder, and cumin.


3. Smear some of the sauce on the bottom of the baking pan, just enough to lightly coat it. Put down a layer of tortillas to cover the bottom of the pan, cutting them in half as necessary. Cover the tortillas with half of the turkey filling. Sprinkle with 1 cup cheese.


4. Create another layer of tortillas topped with filling and cheese. Create the final layer of tortillas and sprinkle with the remaining cheese.


5. Bake at 375 degrees for 25-30 minutes, until cheese is brown and bubbly.
