FROZEN STYLE!


It’s been nearly two months since my vacation to Riviera Maya and there’s one thing that sticks out the most from my handful of memories: all the poolside frozen mojitos!


The stunning resort, which is a magnitude of both adventure and relaxation, is hard to forget too. We stayed at the all-inclusive Valentin Imperial Maya; I’ve been there twice now. I’d love to tell you that I explored the area while there this past April, but this vacation was strictly food, beach volleyball, and lounging by the pool.

Tomorrow is national mojito day! Turns out, frozen mojitos are actually quite simple to recreate. All you need is a hot day and a blender. Hot day optional.


Not optional: little fancy umbrellas.


Mojitos are cocktails made with light rum, lime, sugar or simple syrup, muddled mint, ice, and club soda. They’re dangerous little drinks because they go down so easy! A new-to-me way to enjoy them is blended, or frozen slushie style. Basically, you’ll take some of the same ingredients and throw it all into a blender. And it’s damn tasty!


Ice is the base of your mojito slushies. Along with ice you’ll need fresh mint, lime, light rum, and agave. Simple, I told ya. If agave isn’t your thing, prepare a simple syrup (which is equal parts sugar and water boiled until the sugar has dissolved). Blend it all together until it’s slushie-like. Spoon into glasses. That’s it, you’re done.

For a non-alcoholic treat, leave out the rum and use club soda instead.

Frozen Mojito Slushies





Just the ticket to cool off this summer!











Ingredients:



  • 1/3 cup (80ml) fresh lime juice (about 4 limes)

  • zest of 2 limes

  • 1/4 cup (60ml) agave nectar (or simple syrup)1

  • 1/4 cup fresh mint leaves, firmly packed

  • 1/2 cup (120ml) light rum2

  • 5 cups crushed ice

  • garnish: mint leaves, lime slices, fancy umbrellas


Special Equipment


  • Strong, powerful blender (I like this Ninja or this Vitamix)






Directions:



  1. Add everything to a blender and blend on high until it reaches a slushie-like consistency. Taste. Add more sweetener, lime juice, rum, or mint based on your preference.

  2. Make ahead tip: Prepare frozen mojitos up to two hours ahead of time and store them in an airtight container in the freezer. Before serving, give it a stir then scoop into glasses. They will be extra frosty this way!









Recipe Notes:


Double or triple the recipe for a big batch!



  1. Liquid sweetener is key to the smooth, mellow sweet taste of these frozen mojitos. Agave is by far my preferred choice and I highly recommend it. Simple syrup works too! Simply boil 1 cup water and 1 cup sugar until all the sugar has dissolved. Allow to cool completely before using in this recipe.

  2. Do not use dark rum! A mojito's mint and lime flavors work best with a lighter variety. For a non-alcoholic beverage, sub in club soda.
