Garlic Prawns and Avocado Crostini
Creamy garlicky and lemon infused prawns and avocado on crispy crunchy toasted bread. Perfect for lunch, for a snack or for a Christmas appetiser idea!
Sooooo this was lunch. Well actually, it was brunch. Foodie blogger problems 101: getting the shot in natural light. But not really, because prawns can happen whenever.
And garlic prawns are an exception to the cereal in the morning rule. Well, maybe the garlic breath that comes with it isn’t too crash hawt, but who really cares when prawns are in the same sentence.
So now, these prawns (or shrimp) are so good, they now have their own exclusive post: Lemon Paprika Garlic Prawns.
But for now….Crostini…
I think anyone that loves prawns would love them with avocado. It’s like the perfect marriage besides peanut butter and chocolate.
And on crunchy oven grilled sourdough bread drizzled with extra garlic olive oil is a marriage with the crunchy lover on the side.
After crunching on these at brunch, we sat and watched Transformers 4, for the entire whole day afterwards. It was raining and miserable, and these prawns fixed the mood like a 911 emergency.
And there’s nothing I’d rather do an a cold and miserable Melbourne day than to watch movies with my tribe. It’s my favourite thing in the world.
The only thing missing was the glass of vino to go with it, but not at 11 in the morning. Maybe spiked into my coffee, but noooo not today.
In one sentence….make these. With garlic breath and all. Because prawns are worth the listerine mouth wash afterwards.
Really….they are.

Garlic Prawn and Avocado Crostini
Weight Watchers: 5pp per piece (including prawns and avocado)
Ingredients
Garlic Prawns:
- 2 tablespoons garlic olive oil
- 2-3 garlic cloves , minced
- 1 teaspoon sweet paprika
- Juice of half a lemon (about 1-2 tablespoons)
- 500 g | lbs king prawns , no tail, peeled and deveined
- 1/4 cup fresh parsley , finely chopped
Avocado Salad:
- Cooked prawns (see above)
- 1 avocado , cubed
- 1 ripe tomato , diced
- Juice of half a lemon (about 1-2 tablespoons)
- salt to season
- 1 loaf ciabatta or sourdough vienna bread , cut into 1cm slices
Instructions
- Preheat oven to grill/broil settings on medium - high heat. Place bread on a baking tray lightly greased with cooking oil spray or oil. Grill/broil until golden. Remove and set aside.
Garlic Prawns:
- Combine garlic, paprika, lemon juice and prawns in a bowl and mix well to combine the ingredients. Add salt to season (to your tastes). Drizzle garlic oil onto a large frying pan/skillet. frying pan. Heat over medium-high heat for about 3 minutes. Reduce heat to low. Add the parsley and cook for a further 2 mins until prawns change colour. Set aside.
Salad:
- Combine avocado, tomato, lemon juice and salt in a bowl, mixing well to combine. Add the prawns and fold through gently until just combined. Spoon prawn and avocado mixture onto toasted bread. Serve warm or cold!
