Old Fashioned Orange Slice Oatmeal Cookies
We were at a family party a few weeks ago and my husbands sweet Aunt Linda made these. I almost didn’t try them because I thought the orange pieces were dried apricots, but my daughter took one and then refused to eat it, leaving me with no other choice. Oh my, I’m so glad my daughter has no clue what is good! These cookies are delicious! Orange slices and shredded coconut all wrapped up in a tasty little oatmeal cookie. Aunt Linda said she had these growing up. I love a good old fashioned cookie!
Time to Make It: 30-45 minutes
Yield: About 36 cookies
Ingredients
1 cup granulated sugar
1 cup brown sugar
1 cup shortening
2 eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups quick oats
2 cups orange slice jelly candies
2 cups shredded coconut
Instructions
1. Cut the orange slices into small pieces. I like to cut them in half lengthwise and then into 3 or 4 pieces on each half.
2. Preheat oven to 350 degrees. Lightly grease a baking sheet.
3. In a large mixing bowl, cream together sugars and shortening until fluffy.
4. Add in eggs and vanilla and beat well until combined.
5. Stir in flour, baking powder, baking soda, and salt until combined.
6. Stir in oats, coconut, and orange candy.
7. Roll into one-inch balls and place on prepared baking sheet.
8. Bake in the preheated oven for 10 to 12 minutes until lightly browned.
