Visiting my mum is always a treat. She cooks and bakes and spoils us with so.much.food. We don’t walk out of there. We roll. So I always mentally prepare myself to save some space during the day for her buffet dinners. Yep. Or I get in trouble. Oh yeah, I’m sure I’m still 10 years old in her eyes, as my children are still babies to me.


Walking in to her house on this day was absolutley incredible. She found a recipe somewhere in a magazine, remembered parts of it, and created this beautiful meal! So, as you can imagine, the aromas floating around as soon as we walked through the door knocked us over into another twilight zone.


The mixture of garlic, lemon and fish, mixed with the mouth-watering wafts of pastry. I’m still floored.

And as I usually do, I crowded around her bench tops, picking off pieces of whatever I could (while she wasn’t looking) to taste test. Don’t judge. I know you do it to. *wink wink*


Well. Slap me sideways and Oh Em Gee.


Armed with my new baby, my Canon 6D and of course the camera’s baby (my special lens) I morphed like a power ranger and leaped into food photographer mode. Ripping open blinds, cutting open lemon wedges and raiding her cupboards for ANYTHING I could find.



All with the speed superman woud be proud of. Like, the food was going to grow egs and run off into the distance. No joke.


How could I not though? Just LOOK at this masterpiece?

Ingredients

  • 1 tablespoon garlic olive oil
  • 1 onion , chopped
  • 1/3 cup rice (white long grain or brown rice is fine)
  • 2 cups (240g) baby spinach leaves
  • Salt to season

  • 2/3 cup water

  • 4 tablespoons freshly squeezed lemon juice
  • 2 tablespoons fresh parsley , chopped
  • Ground pepper
  • 2 sheets reduced-fat puff pastry
  • 2 fresh skinless and boneless salmon fillets (400g)
  • 1 whisked egg

Instructions

  • Heat the oil in a medium suacepan and fry the onion until soft and transparent.
  • Add in the rice and spinach, cooking for a further minute until spinach has wilted. Season with the salt and garlic powder/minced garlic.
  • Add water and stock powder to the pan, and bring to the boil, stirring to combine all ingredients.
  • Reduce heat to low heat, cover pan, and gently simmer for a further 12 - 15 minutes, or until rice is cooked through.
  • Rmove from heat and stir through lemon juice, parsley and pepper.
  • Set aside and allow to cool
  • Preheat oven 210C | 410F.
  • Line a baking tray with baking/parchment paper.
  • Slice each salmon fillet horizontally through the centre to create thin fillets
  • Cut pastry sheets in half (to make 2 rectangles per sheet) on a lightly floured work surface
  • With the shorter edge in front of you, spoon 1/4 or the rice and spich mix on the lower half of the pastry, leaving a 2cm | 1-inch border around the edges
  • Lay the salmon fillet on top and brush the edges of the pastry with water.
  • Fold emtpy side of pastry over to envelope salmon, and seal the edges firmly with a fork
  • Transfer parcel over to baking tray
  • Repeat with reamining pastry, rice mix and salmon
  • Once all parcles have been made, brush with the whisked egg and bake for 20 - 25 minutes or until golden brown.
  • Serve warm over salad.
