March Secret Recipe Club...Featuring Simple Fudgy Nutella Brownie Bites
Time for another fun Secret Recipe Club reveal! My assigned blog this month was Cook Lisa Cook. Lisa's blog has all sorts of great recipes, but I knew I found just what I was looking for in a matter of minutes. I needed something quick to make that tasted delicious...and her Three Ingredient Fudgy Nutella Bites met all my criteria! I adore Nutella, and it's the star ingredient in brownie bites that are literally baked and ready to eat in about 30 minutes -- depending on how long you can hold out to let them cool! These Simple Fudgy Nutella Brownie Bites are a busy cook's best friend.
These brownie gems are made with Nutella, eggs, and flour. That's it! Where you go from this starting point is up to you, though. I added two extra ingredients that I thought would enhance the original recipe ever so slightly. I added a bit of cinnamon to the batter since I love how it combines with chocolate...and I sprinkled the top of each brownie with a few mini chocolate chips before baking. I had the mini chips on hand...and I thought it would be a fun way to up the chocolate goodness! Let me show you how simple this genius recipe is to whip up...
Simple Fudgy Nutella Brownie Bites
Adapted from Cook Lisa Cook
Step 1: Preheat oven to 350. Add 1 cup Nutella to a microwave-safe bowl and heat for 30-45 seconds, just to soften. Add 2 large eggs, 1 cup flour, 1/2 tbs. cinnamon, and 1/2 tsp. sea salt. Stir until combined into a batter.
Step 2: Evenly spoon the batter into the bottom of 12 cupcake liners -- about 2 tbs. of batter each. Mine were heavy-duty, so they stood up on a cookie sheet...but use a muffin tin if you use paper liners. Sprinkle with mini chocolate chips, then bake for 10-12 minutes. Make sure to turn the pan around halfway through baking. Don't underbake...you want the middles to be a bit fudgy once they cool. Remove from oven and cool for at least 15 minutes before eating.
These brownie bites are really yummy -- and really easy to make! They are full of chocolate flavor and the middles are nice and moist. We loved the pop of chocolate from the mini chips on top, and the cinnamon was a nice subtle background note. The portion size is perfect when you want "a little something sweet" to go with your coffee...or a quick after-dinner treat. I always have these ingredients on hand, which makes it really convenient to whip up a batch whenever the mood strikes. Which may be often...just saying!
